Lots of us love cooking, but we don’t always have time to spend in the kitchen. We are delighted to share with you this delicious and quick Christmas biscuits recipe. These biscuits are very popular in Italy, especially during the Christmas season and we hope you will like them too!!!

BISCOTTI MORBIDI DI NATALE

 

Christmas Almond Biscuits

60g dried cranberries
120g caster sugar
180g ground almonds
1/2tsp almond essence
zest one lemon
pinch salt
2 tsp honey
2 egg whites
icing sugar, for dusting

 

  • Heat oven to 170°F.
  • Mix together all  dry ingredients.
  • In a bowl, whisk the egg whites and honey into nice, soft peaks.
  • Fold eggs gently into the dry ingredients mixture to form a soft paste.
  • Divide paste into 20 parts and form balls – they should be walnut-size.
  • Then roll each ball in icing sugar, flatten slightly, and place on a greaseproof-covered baking tray.
  • Bake for 12 minutes, just until slightly browned but they should still be gooey inside.
  • Leave to cool.
